Bacon Pasta! - Upgraded.

Remember the other bacon pasta recipe? This is kinda like that but better?

So it's got asparagus too. I've tried it without but it kinda adds this weird freshy-greeney flavor? So just add it and then later don't eat it. But tbh - asparagus isn't so bad.


My brother and I were attempting to "eat more vegetables" so that's how this recipe eas found and subsequently modified lol


Ingredients

  • 1/2 lb uncooked pasta

  • 1/2 lb. (about 8 strips) bacon, diced (tiny squares)

  • 1/2 lb fresh asparagus, ends trimmed and cut into 2-inch pieces

  • 1/2 cup dry white wine (or you can double this if you’d like) :D

  • 1/2 cup grated Parmesan


Directions

  1. Cook the pasta in a large pot according to the instructions on the packet. Add an INSANE AMOUNT of salt to the water while cooking the pasta okay?

  2. While that's cooking, add the bacon pieces to a pan and cook it over medium heat until it's crispy. Take it out in a bowl/plate

  3. Add the asparagus pieces to the pan and cook it in the bacon grease for about 5-6 minutes, stirring occasionally, until cooked.

  4. Remove the asparagus and keep it aside with the bacon.

  5. Slowly add the white wine to the pan, and scrape the bottom of the pan with a spoon to deglaze the pan and pick up the bits of bacon that are prolly still stuck. (LOVE these) Continue cooking for 5 minutes, or until the wine has reduced by about half. Then turn it off.

  6. When the pasta is cooked, drain it but save some of the pasta water. Don't drain it all.

  7. Then add the pasta, asparagus, bacon and 1/4 cup Parmesan cheese to the saute pan with the wine, and toss until combined. Sprinkle pasta with the remaining Parmesan cheese and serve immediately.

Note :

If the pasta seems super dry, add in 1/4 cup of the pasta water that you saved earlier and mix it :D
