Bacon Spaghetti

This is an easy, modified version of a slightly longer recipe. I LOVE IT!

Super yum!

I saw this recipe on Instagram actually, and I saved it. I was super tired after work one day, during the lockdown but I had promised to make dinner, so I shortened the recipe so that I could finish up and sleep. It actually ended up being really good.


Ingredients

  1. Salt

  2. Spaghetti

  3. Pancetta or bacon, finely diced. (small squares)

  4. Oil (preferably olive, but others are cool)

  5. 3 tablespoons (about 4 big cloves) minced garlic (just smash it)

  6. Chilli flakes (to taste)

  7. 2 teaspoons black pepper, plus more to taste

  8. 2 lemons (we need the juice)

  9. Cheese


Directions

  1. In a large pot of heavily salted boiling water, cook the spaghetti according to the package directions.

  2. Reserve 1 cup of the pasta water (it comes in handy), then drain the pasta.

  3. Meanwhile, in a large skillet, cook the pancetta/bacon over medium-high heat until crisped, 7 to 9 minutes. Add the oil, then add the garlic, chilli flakes, and black pepper and cook until fragrant, about 1 minute.

  4. Add the lemon juice to the skillet, then toss in the drained pasta and toss to coat. Add the cheese and toss, adding the pasta water, a couple of tablespoons at a time, just to help the cheese coat the pasta.

  5. Season to taste with additional salt, lots of black pepper, and red pepper flakes. Serve with more cheese.
