This used to be our 2012 favourite dinner foods. Mary, Ali and I lived together and whenever I'd cook on weekends they'd ask me to make this.
This is also one of those recipes that my Dad made for us a lot when we were kids.
It's super simple and basically just comfort food.
He made fresh sausage rice, which I'll make for you someday because I really can't explain how to make rice to you?
But well, this one is a modified recipe with leftover rice so it might be easier to do.

Ingredients
1 tablespoon oil (sesame goes really well but any will do)
¼ finely diced onion (means chopped very tiny)
1-2 finely diced garlic cloves
1.5 cups rice cooked (you can use leftover rice. It tastes best with leftover rice)
¼ cup frozen corn
⅓ cup frozen peas and carrots
1 egg is optional
2-3 sausages sliced into rounds. (You can add more if you like)
1/2-1 tablespoon soy sauce up to your liking
Directions
In a pan on medium low heat - sauté your onions for a few minutes until they're translucent on medium-low. Add in your finely diced garlic and don’t let it burn just sauté it for 20 to 30 seconds.
Push your garlic and onion to the side and in your sausage. Fry the garlic, onion and sausage for a bit.
Now move the garlic, onion and sausage mix to the side and quickly scramble one egg. You can now add in your leftover cooked rice and your veggies.
Once you stirred in your veggies and cook them for about a minute you can add in your soy sauce of choice which will be to taste, I like less. But that's just me.
