The yummiest chicken soup ever.

This is a winter recipe, but I just have it all the time for dinner because it's really light and nice. You'll love it because the vegetables are all optional lol.

This is really nice because if you add rice or eat it with dinner rolls and stuff, it's a proper meal. This recipe feels like home to me. So some day, when I have one (if) - I imagine that on a cold winter day, my house will smell like chicken soup.


Ingredients

  • 4 chicken thighs or any cut of chicken

  • salt and pepper to taste

  • 1 onion finely diced

  • 1 celery stalk finely diced

  • 1 carrot peeled and diced

  • Hot water (about 8 cups)

  • 4-5 garlic cloves finely diced

  • 3-4 tablespoons olive oil

  • ½ cup cooked-rice (optional)


Directions


  1. In a big pot on medium heat add your oil, add the chicken and let it sear on each side for a few minutes. You can also season it with salt and pepper to taste.

  2. Add the onions, carrots and celery and let them go for 2 minutes until softer.

  3. Finally, add your garlic and cook off the raw flavour for 1 minute. Add your hot water, let it come to a boil.

  4. Once boiling reduce your heat to medium-low — and partially cover it for 40 minutes.

  5. Once your soup is done, take out the chicken, and add 1/2 cup of cooked rice to your broth. Remove any skin or bones from the chicken, shred it with a fork and add it back in.

  6. DONNNEEEEE!
